The Details

Tasting Note "The fragrant aromas in the original base wine have ceded to more complex autolytic aromas of marzipan and brioche from extensive time on yeast lees. Red fruit notes from the dosage incorporating Pinot noir has melded with the autolysis characters leading to a more savoury Rosé expression in this late disgorged wine. The powerful and focused acid line, such a feature of the 2011 vintage, has held the freshness and structure intact."
Best Enjoyed With Fresh oysters drizzled with finger lime dressing or porcini mushroom arancini.
Treatment Within the gently undulating Jansz vineyard is a small area on top of the hill that face to the north and overlooks Bass Strait. This small patch is where the Pinot Noir destined for the Vintage Rosé grows. Each year the grapes (and the eventual wine) from here are heady with perfume and flavours reminiscent of roses, strawberries and pepper-berry. The fruit was hand picked, gently pressed, fermented and matured in old French oak. This one small parcel was tiraged as a single batch.
